ESPRESS YO-SELF COOKIES

(paleo chocolate hunk espresso cookies)

What you’re puttin’ in:

  • 1 egg

  • ⅓ cup coconut oil or grass-fed butter, softened

  • ¼ cup coconut sugar

  • 1 t vanilla extract

  • 1 ⅔ cup almond flour

  • 2 T arrowroot flour

  • 2 T ground espresso 

  • ½ t baking powder

  • Generous pinch of sea salt

  • ½ cup chocolate hunks

How It’s Goin’ Down:

  1. Preheat oven to 350 degrees

  2. Mix together the coconut oil and sugar until wet and creamy

  3. Add the egg and vanilla, combine thoroughly

  4. In a separate bowl, stir together the almond flour, arrowroot flour, espresso, baking powder, and sea salt until well combined

  5. Combine the dry mixture with the wet and mix thoroughly until a dough forms.

  6. Stir in the hunks.

  7. Place 2 T sized dough balls onto a parchment lined bakesheet and press down gently

  8. Bake for about 10 minutes or until lightly browned around the edges

  9. Remove, let cool, and enjoy!
