ESPRESS YO-SELF COOKIES
(paleo chocolate hunk espresso cookies)
What you’re puttin’ in:
1 egg
⅓ cup coconut oil or grass-fed butter, softened
¼ cup coconut sugar
1 t vanilla extract
1 ⅔ cup almond flour
2 T arrowroot flour
2 T ground espresso
½ t baking powder
Generous pinch of sea salt
½ cup chocolate hunks
How It’s Goin’ Down:
Preheat oven to 350 degrees
Mix together the coconut oil and sugar until wet and creamy
Add the egg and vanilla, combine thoroughly
In a separate bowl, stir together the almond flour, arrowroot flour, espresso, baking powder, and sea salt until well combined
Combine the dry mixture with the wet and mix thoroughly until a dough forms.
Stir in the hunks.
Place 2 T sized dough balls onto a parchment lined bakesheet and press down gently
Bake for about 10 minutes or until lightly browned around the edges
Remove, let cool, and enjoy!
