Carrot Ginger Soup

- Olive oil (or coconut, ghee, avo, sesame, anything you have!)
- 1 onion of your choice (chopped)
- 1-3 cloves garlic (minced)
- 1-2 Tbsp ginger (grated or finely chopped)
- 5 cups of carrots (chopped)
- 4 cups veggie, Bone or chicken stock
- Seasonings of your choice to taste (I use SALT, and pepper, turmeric, paprika, cinnamon)
- 1 can coconut or dairy free milk of your choosing

Instructions:

- Sauté onion in cooking oil of your choice until soft, add in garlic & ginger and stir for another minute
- Add in carrots and stir for another couple of minutes
- Stir in a little seasoning (I use about half in the beginning and add more to taste at the end)
- Add the broth, cover bring to a boil and then reduce heat and let simmer and until all your ingredients have gone soft. (Just about the only time we like when everything has gone soft)
- Let soup cool and stick in blender with your dairy-free milk choice OR if you have an immersion blender use it right now!
- Taste and add seasonings as you wish!
- Put it in a mug and sip it till cup is dry while watching your favorite Porno, I mean Rom-Com.
