Beef & Veg Soup

Ingredients:
- EVOO
- 1 chopped onion
- 2 cloves minced garlic
- 3-5 small potatoes, cubed
- 3-5 carrots, any shape you like
- 1-2 ribs celery, chopped
- 1 Lb beef
- 15 oz tomato sauce
- 2 T balsamic vinegar
- 1-2 cups water
- 1-2 t chili powder
- 1-2 t paprika
- 1 t turmeric
- Salt to taste
- Pepper to taste

Directions:
- Heat EVOO in large soup pot and add garlic and onion stirring until slightly TENDER
- Add beef, stirring until browned, drain any remaining fat
- Stir in remaining veggies and sauce and toss around for about 2-3 minutes
- Add in water, vinegar, and seasonings
- Bring to a boil and then reduce heat and cook on medium low until veggies to desired softness.
- ENJOY the heck out of that meat
