Sheet Pan Fridge Trash
What You’re Stickin’ In It:
Anything you effing like. That’s the beauty of fridge trash! Think leftover chopped veggies (and fruit!), veg about to go bad, etc.
Squash, tomatoes, onions, garlic (I love whole cloves), peppers, leeks, artichokes, dried fruit and veg, mushrooms, greens (lettuce included), etc.
Chicken Breasts or Thighs (thighs are my jam, but you may be a breast person)
Balsamic
EVOO
Salt, pepper
It Goes Down Like This:
Preheat oven to 375 degrees
Roughly chop and drop all of your fridge trash on a giant baking sheet (line with parchment and foil for easy AF clean up) and add chicken breasts or thighs whole
Drizzle with EVOO, balsamic, salt and pepper (and anything else you care to spice it up with)
Toss that salad good till it’s all lubed up. Heat it up in the oven for about 40 minutes (toss it once through if you’re feelin’ it), or until chicken is cooked through. Remove and enjoy!
