Party In Your Plants Protein Muffins

Want to add more protein? Trying to eat more plants? Then you are gonna wanna bang a couple of these out this week!

(makes 10-12 muffins)

Put It In:

  • 1 15 oz can chickpeas, drained and rinsed

  • ½ cup creamy organic Peanut Butter (or any nut butter)

  • ⅓ cup maple syrup or honey

  • ½ T vanilla extract

  • 1 t baking powder

  • ¼ t salt

  • Optional chocolate chips

  • Optional protein/fiber add ins - chia seeds, flax, or hemp seeds

Let’s Do It:

  1. Preheat oven to 350 degrees

  2. Line a 12 cup muffin tin with liners and spray the liners

  3. Place chickpeas and 1 egg in a food processor and blend until smooth. 

  4. Add the remaining eggs, peanut butter, sweetener, vanilla, baking powder, and salt, blend until smooth.

  5. Fold in optional add-ins

  6. Bake for 25 minutes or until muffins you stick your stick in and it comes out clean.
