Sweet & Salty Cookies (aka the best cookies ever!)

What you need:

  • 1 flax egg (1 T ground flax with 2 ½ T water)

  • ¼ cup nut butter of your choice (I used almond butter but have made with peanut and tahini, sooo good and a great way to change up your plants!)

  • ¼ cup coconut oil soft, not melted (or grass-fed butter or ghee)

  • 2 T coconut sugar 

  • 2 T maple syrup or raw honey

  • 1 T vanilla extract

  • 1 ⅛ cup almond flour

  • ¼ cup arrowroot flour

  • ½ t baking soda

  • Generous pinch sea salt

  • ¼-1 cup chocolate chunks*

  • ¼-1 cup potato chips (I used Siete Sea Salt with avocado oil)*

  • ¼-1 cup chopped walnuts*

*add as much or as little as you’d like

How To Do Me, I Mean It:

  1. Preheat the oven to 350 degrees and line a baking sheet with parchment paper

  2. Prepare flax egg by mixing ground flax seed with water and let sit, stirring occasionally

  3. While flax egg is gell-in, mix the dry ingredients, almond flour through sea salt

  4. Mix wet ingredients, adding flax egg at the end

  5. Add dry ingredients to wet, mixing thoroughly

  6. Add chips, chunks, nuts and mix (the chips will break up as you mix)

  7. Using a medium cookie scoop, place dough onto baking sheet and press down gently to flatten

  8. Bake for about 10-12 minutes, or until slightly browned. I turned my sheet halfway through.

  9. Remove, let cool, and you are welcome.
